Hello all. I've been a member for a long time but have never posted. Thought I would finally introduce myself. I am David and new to the Saint Louis area. I have a Weber 22" Performer Deluxe and a Camp Chef double burner for sautéing and to get my cast iron pans nice and hot for steaks and reverse sears. I have not had/used charcoal in about a decade so a lot of testing right now. Really struggling with keeping consistent temps. So used to gas and adjusting as I need it. Thanks to all the helpful posts out there for getting the charcoal grill going and keeping a consistent temp.
