Fuels Used:
Splits/Chunks, whatever I can get. Usually B&B competition. Favorites are Cherry, Apple, Post Oak, and Hickory.
Pellets, Lumberjack.
Charcoal, whatever is on sale. Currently have a bunch of KBB. Will eventually try B&B. Use whatever lump is on sale in my Ooni.
Propane, Blue Rhino.
Rubs:
Usually make my own riff’s on Memphis Dust and BBBR. Also use Meathead’s commercial rubs and occasionally try something new. I like a couple from Tuffy Stone and Kinder’s. After several surgeries, I’m very sensitive to “spicy” stuff, so I need to be careful about heat levels.

i have the barrell house cooker,similar will give a better smoke than my green egg,both great
i cook brisket at least ounce aweek,pass it around the neighhood,i trim it,add trimings to drip pan with applejuice onion,bell peper,celery,strain thisadd to saucepan with some tiger sauce,and flour to thicken a bit and u have a dip i u wish
i inject the brisket with beef stock,cover with crystal hot sauce and kosher salt set in fridge at least overnite ,than add black pepper,cook till internal 156..165...remove wrap infoil,also remove drip pan,grill to 203.....wrap in towel,in cooler ..ice chest...at least 1 hour ...slice and enjoy..if i do burt endscube the point outsidecuts about 1 inch pieces,place in cast iron pan blazing hot with butter toss sear about 1 minute...will be awinner
