Hi RonB, I currently cook with the BGE a lot, (well I did, I'm currently away on business for a year). I'd like to cook larger amounts, and I don't care for the drawback of removing the indirect plate to add wood or charcoal. You can cook everything from meat, chicken, and seafood to breads and pizza now - what do you think an offset will do that your bge won't do. Of course, if you want to cook for a bunch of people, the bge might limit you.

Hi Spinaker, I was thinking a Lang 48' or 60. Not sure where I'd put the trailer in my current setup, I have a whole lot of logistical questions about purchase and storage. Welcome! Make sure your second book is Aaron Franklin's Meat Manifesto! Get a good a good thermometer! Drink beer if at all possible while cooking! While cooking never stand up if you can sit down, and never sit down if you can lie down! Do beef short ribs, there is something about producing great shorties that makes you feel like a real pit master even if you've newbie - May your smoke always be blue!

Hi, my name is Darrell. I'm an OTR truck driver for over 25 years. During my off time I love doing backyard cooks. I have a 48" Lang Deluxe smoker, Rec-Tec pellet smoker,1 Weber Genesis 330, 1 Weber Performer (blue), 2 Weber kettles (1 black and 1 Copper), 1 26" Weber kettle, a WSM, 8 Maverick Redi Chek thermometers, a PartyQ, 2 SnS, Grill Grates, Cast Iron grates, 1 ThermoPop (orange) and 2 ThermoPens (pink and orange) and planning on adding more cooking accessories. Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.
