excited to have finally joined I've been scouring reviews and recipes from the site for over a year now and finally decided to join the Pit. I'm from San Antonio and have been BBQing and learning techniques for a few years now. As a Texan brisket has always been an intriguing challenge and I have had amazing brisket and some terrible brisket and have always wanted to try my hand. After extensive research (mostly from Amazing Ribs) I bought a Pit Barrel Cooker (2 years ago) and and have been smoking brisket as often as I can. My first one was terrible but I am a few dozen in and now I have it down pretty good. People keep offering to buy full packers for me to smoke for them lol. Always room to improve though. I just bought a Joule and my next attempt will be sou vide brisket.
Obviously I would be doing the PBC great injustice if I only limited it to brisket but man that thing has churned out some incredible turkey ( my family has switched to only smoke turkey for thangsiving now) ribs and pork butt. Homemade bacon and sauasge or on my project list as well.
