Hi Everyone, Dan Snow from Sacramento here. Joined a couple days ago. I'm retired, enjoy cooking outdoors. About couple years ago a friend of mine got me to try charcoal instead of gas and I love it, though I know next to nothing about it. Had some medical issues that kept my grilling and BBQ to a minimum the last couple of years but now I'm back. We needed a new grill and I'd always wanted a smoker, so when we saw the Char-Griller Smokin' Champ on sale at the local Home Depot I picked it up. Spent a couple hours putting it together and ran a trial batch of charcoal through it.
It was about then that a FB friend steered me to this website. I really like the site, the info here is fantastic. But, ..... I do have to admit it was a little disheartening to read Meatheads opinion of, (GASP!) COS!!!!! Then he followed up with a litany of suggestions on improving their function, a couple of which I have already tried.
Of course it has rained 6 out of 7 days since we got the thing, so so far I've only cooked a single tri-tip on it. That came of great, by the way. Today I will be trying the Huli-Huli Chicken recipe, and I mixed up a batch of Memphis Dust to try on some ribs tomorrow.
Looking forward to learning a lot, meeting new folks, burning a lot of charcoal and wood, and eating some great food.
