    Dan Snow from Sacramento

    Hi Everyone, Dan Snow from Sacramento here. Joined a couple days ago. I'm retired, enjoy cooking outdoors. About couple years ago a friend of mine got me to try charcoal instead of gas and I love it, though I know next to nothing about it. Had some medical issues that kept my grilling and BBQ to a minimum the last couple of years but now I'm back. We needed a new grill and I'd always wanted a smoker, so when we saw the Char-Griller Smokin' Champ on sale at the local Home Depot I picked it up. Spent a couple hours putting it together and ran a trial batch of charcoal through it.

    It was about then that a FB friend steered me to this website. I really like the site, the info here is fantastic. But, ..... I do have to admit it was a little disheartening to read Meatheads opinion of, (GASP!) COS!!!!! Then he followed up with a litany of suggestions on improving their function, a couple of which I have already tried.
    Of course it has rained 6 out of 7 days since we got the thing, so so far I've only cooked a single tri-tip on it. That came of great, by the way. Today I will be trying the Huli-Huli Chicken recipe, and I mixed up a batch of Memphis Dust to try on some ribs tomorrow.

    Looking forward to learning a lot, meeting new folks, burning a lot of charcoal and wood, and eating some great food.

            Welcome to the Pit Dan Snow ... now that you've joined the Pit I wouldn't really worry much about your new Smokin' Champ and if it was the right choice. I'm sure many Pit members will coach you up on how to master that cooker.

            What you need to worry about is becoming inflicted with the MCS.🙈 We've all got it.😖

            The more you browse through the Pit you are going to see many, many cookers and accessories that you didn't even know existed before joining. You will see extraordinarily beautiful food that has been BBQ'ed to absolute perfection using these cookers and accessories and you will scratch your head and think... I MUST get me one of those.😬

            Once More Cooker Syndrome kicks in... there is no cure.😖 Your patio and/or deck will fill up quickly. I'd start looking for a storage shed soon.😎

            Maybe... you won't get MCS, but I highly doubt it.🙄

                      Dan Snow welcome .... I'm originally from the Sacramento area myself. My Dad's family is from Rocklin/Loomis area, actually .... way back when it was the boondocks and Sacramento was the faraway big city. And Mom's family is central valley, like Elk Grove, Galt, Lodi area. These days I live near Seattle.

                      Anyhow .... don't worry about that Char-Griller ... you can do some great stuff with one of those, with some patience, some reading, some planning. That was all I had for a long time, and I learned how to cook ribs on it that people really enjoyed.
