    Smoking in the Desert

    Hello Hello!
    How's it going folks, my name is Eric, fairly new to smoking but I have loved every moment so far!
    Fairly basic setup at the moment I have a standard kettle grill I use for some good 2 zone grilling/smoking, I recently purchased a simple smoking cabinet I am eager to fire up. Haven't tried too much yet, brisket, pork shoulder, beef bottom round, I did just start the curing process on some pork belly and am looking forward to smoking some bacon! Looking forward to all the help, tips/tricks and whatever other advice you guys have!

            Welcome to the Pit! I'm also Eric, but ecowper works fine too ..... what kind of kettle and smoke cabinet do you have? What's your favorite cook so far? Love making my own bacon!

              Currently I have a 22.5 in generic kettle grill that has worked for me great so far, I have a char-broil 30in charcoal cabinet but I still haven't gotten to set it up or try it out yet, hoping it will be waiting for me today when I get home! Favorite smoke so far was probably my first, smoke a 8lb picnic pork shoulder on a 18in square grill, took 6 hours ish, was a little over done due to the small cooking area I had, but it was awesome and I was hooked.

                That kettle can do all kinds of fantastic stuff. You might look into getting a Slow N Sear for it.

                          Welcome to The Pit ERipley! Nice to have you here with us. Nothing wrong with generic simple gear, the meat doesn't care. I started with a $80 Brinkmann cabinet charcoal smoker from Home Depot. The only reason I retired it was because of a fire--I used to wrap it in winter with cellulose batt insulation. It's flame retardant but not fireproof. Well, it retarded the flame all it could I assume, and then the flame won....the rest is history. I made some mighty fine ribs and butts on that thing, and things went up a few notches when I got a Maverick too. Of course, the great info here on AmazingRibs helped too!

                            Thanks! While the dream will always be to have some amazing backyard setup, the truth is unfortunately I have a small apartment with an even smaller patio, so im a little limited, so until I can move up to a something with a proper backyard Im just going to focus on mastering what I have, and whatever I can find on here of course.
