    vBlake Sayin Hello!!

    Howdy folks! Long time site creeper first time caller here. Love the site so I decided to give it a shot so I can dig in deep and get the ins and outs of all things BBQ! Been smoking/grilling heavily for around 10yrs now and have fallen in love with anything BBQ.

    First started by entering steak cooking competitions with a fellow member (robertsonsmokehouse) and it has spiraled out of control since then. We actually got to hang out with Meathead himself when he was down at the Magnolia Blossom festival as a Judge. What a great guy! (remember us? Sizzle & Steer)

    I enjoy anything "Grill" and cooking. My family likes to go to the lake, fishing, hunting, and roasting marshmallows. I have cookers from small hibachi sized to full pull behind rigs. My wife says I have an issue, I would happily agree with her.

      and burns hickory too...oh yeah...nothing like smelling hickory burning in a smoker. My two choices are hickory and oak.

      I fully agree! Hickory, Oak and Pecan are very easy to get in my neck of the woods. Central Arkansas. I have yet to do a full smoke with oak alone. I may try that!

      I did an oak only cook with a brisket about two weeks ago... wasn't bad...wasn't bad at all

      It was a semi custom built rig. So from what I gathered there was a group of guys in N. Alabama building these smokers. They seem to all have broken off and started their own thing. This type smoker is very similar o the HBT smokers, Black Warrior, Howard Hinkleman. Mine is a Howard Hinkleman. They are not mass produced but do have some custom options.

      Its a Reverse flow, with Warming/Rib box and back grill. I feel the "warming box" get too hot to be a warmer, being that it stays about 10° below the main chamber. However with all butterfly valves open when fully going the back grill stays at 160° ALL LONG DAY (ALD). Its perfect for full pans of beans or meat to stay nice and warm. oh and it does have two pull out racks, so whole hogs are possible and a side burner for those late night propane parties!

          ecowper thanks!! Yeah I have had that smoker now for about 2 years. It all started by having extra room on the smoker so I'd throw an extra butt or two on and sell to other people that were interested... That grew from cooking 2-4 butts to 6-8 butts at a time. then when request came in that I was cooking 2 nights in a row, I knew something had to give. So I got something to accommodate. It seems now I buy more cases than single butts.

              vBlake and I thought I could cook a lot of meat between my Hasty-Bake and my WSM 22. Looks like I may have to convince my wife that I need another rig
