Greetings! I just joined today and am pretty new to wood BBQ.. I don't want to obligate to an offset smoker just yet, so I started with a 22" Slow n Sear Kettle to learn fire management etc. Several years ago, while visiting my Wife's family in Michigan, her cousin made a brisket on an offset and it was still to this day one of the best things I've ever tasted. It was then, that I said one day I am going to make this, hopefully as good. So I finally started. Did a chuck roast Sunday, turned out great. Still need practice with temperature control! Have a great day! - HJ

I've got a 22" weber, but have not tried a brisket yet
(corporate accounting won't cut the purchase order for it, says it's not necessary, cook & eat something else.)

Welcome to the site.
You're right on track. Two zone cooking with wood chunks on the hot side. Chuck roast, Pork butt and ribs are a great place to start the learning process. Lots of how-to articles available on this site and lots of experienced Pitt Masters ready and willing to answer your questions.

Welcome to The Pit from Texas. I have a Weber Kettle with the SnS insert as well as a Vortex and a Cajun Bandit Rotisserie. You can do great BBQ and grilling on your SnS Kettle. Smoke-low and slow or hot and fast, grill, front and reverse sear, 2 zone cooking etc. Enjoy your cooker and post pictures of your cooks. Enjoy.Last edited by Purc; February 11, 2026, 10:40 AM.
