    Long time griller and smoker

    But new here. And I'm an old fart.

    Began grilling on a hibachi when in college in the early 70's. Did that until my FIL gave me a PK grill when I married his daughter in 1984. Also in the 1980's, I bought a Brinkman water smoker, but never figured it out. Did not have all the info on the internet then but I don't think it would've helped me with that smoker.

    The PK grill and the Brinkman were stolen off my patio in 1989. I missed the PK grill but they did me a favor taking the Brinkman.

    That led to my first Weber Kettle in 1990. I cooked happily on that for most of the decade. But was looking for something more by year 2002 and I found the WSM. Everything got better. Its hard to beat the combo of a Kettle and a WSM, that covers almost all the bases.

    And I was content with both until I read Aaron Franklins first book. And I was intrigued with smoking meats with wood. I bought an Old Country Brazos and took my barbecue to another level. And that lead to a Franklin pit.

    But I also got distracted by a Masterbuilt 560 that I found at Walmart on sale for $250. I bought it out of curiosity. And I was greatly surprised with it as a smoker, it had thin blue smoke and good air flow. So intrigued by gravity feed smokers, I bought an Assassin 17 and I'm now learning this new smoker.

    And here I am. Its been a barbecue journey.

          That would be a lengthy post on each, but I'll try to get to that.

          Best thing I can say about the Brazos is it was a good pit to learn on. I found it used on Craigslist for $600. Owner had cooked on it three times. I had it four years and sold it for $625 and it schooled me on offset pits. Primarily because its such a funky cooker.

          The Franklin, well, its a Franklin. Just feed it splits.

          And I've had the Assassin 6 months now. Still not sure what to think.

                I looked at the Stumps baby and almost pulled that trigger, but Assassin ran a sale last Memorial Day and the price diff was the deciding factor.

                I run mine with a Thermoworks Billows and it holds temps extremely steady. But I'm still finding quirks where it does things I don't understand, yet.

                I'm doing my second cook on the Baby today. I have a Fire Boss 500 on order but I'll be doing this cook without a temp controller. Glad to have someone to compare notes with as I learn this new cooker.

                I don't think it would be difficult to run manually. Once its dialed in, my guess is it would hold steady. I know my Billows fan does not work very much once the set temp is reached.
