I'd be interested in how many pizzas you can cook before the fire box fills with ash and you have to dump it and start over. I have the first generation Uuni and I can only do about 10 pizzas.
I don't think I'll have an opportunity to test that limit until next spring or summer. Generally, we do no more than a half dozen or so at a time. I will relay any observations, though.
EdF I spent some time looking at Uuni videos last night again, and that thing in addition to great looking pizza combined with your SV as a sear machine appears to be a match made in heaven. Looking forward to your experiences. 🔥
I got the uuni pro and fired it up today. I have to say I was pretty impressed, there were a few flaws, the glass door seems to stick once u hit around 700..it was pretty fun and well mad
e a crap ton of pizzas for me and my wife haha. 6 to be exact. Had minimal ash and could have done a lot more...
I used charcoal and about a minute before I was gonna put the pizza on i tossed a few chunks of wood on. I will say it was pretty fun, and my kitchen was a mess haha

The wood or charcoal option on the pro I do like, although pellets are convenient. Decisions, decisions...
Yeah I enjoyed using the wood and charcoal, I plan on using the pellets next just to see how it works, and when I get the gas attachement I will use that as well,
​​​​​​​So, today was burn out day. Tomorrow could very well be maiden voyage!
I'm very happy so far. Took a half hour from filling a chimney with charcoal about 1/3 full to hitting 850F ambient and 770F on the stones with the assistance of a few small oak splits (like 8" x 2-3"). A little soot on the door and some ash on the stones. Smoke coming out of the stack was the kind we like: invisible except for the distortion pattern above the stack. Holds the temp pretty well, though I suspect continuing splits will be needed for multiple pizzas. I basically took a 4-5" x 8" and broke it down further with the wonderful Kindling Cracker. Yeah, I was concerned about the smoke issue too, because several owners were asking for help. It's the usual balance of air, fuel source and heat that a lot of us have some experience with.
Looks awesome!, let me know if you had any trouble with the door sticking? That was one of the only problems I had was the door sticking once I put the pizzas in.
