Today marks the second cook on my new KBQ. Schedule and weather have kept me from doing much with it since I got it.
I'm doing a rack of ribs (St. Louis cut) today for "Take 2". "Take 1" was possessed of a beautiful bark, but it was too dry. Being used to my BGE I tried to use a similar cook time. I think the KBQ just cooked faster. (Spoke with Bill today and got some tips). So here goes...
I also bought the B&D 'gator cutter. Oh, and an axe. And a chopping log. I've not split wood since I was 12 and living in PA.
The firewood sized split logs I am able to buy locally are a bit too big. So I must split most of them in half, then chop them with the 'gator. I wish the 'gator had a slightly longer cutting capacity. But it works.
Will take some photos of the ribs in progress in a bit. Right now posting this, reading the forum and enjoying beer #2.
