Great pics and write-up! I'm still just dipping my toes in the water with the 17" I recently picked up from DWCowles. I am loving it, but I have a lot to learn.
And good call on the Purnell's sausage. It's goooooooood! (look up the commercials on Youtube if you haven't seen them)

For smoking, I am a committed stick burner.
For grilling, it's all about charcoal. Almost always HEB brand mesquite charcoal. If not that, then Kingsford mesquite charcoal.

That was the side benefit we discovered and my wife really likes it, getting the frying and grease out of the kitchen. Another bonus she likes is I'm not dirtying fry pans it's all on the griddle. I can have the griddle clean and ready for the next cook in under 3 minutes a fry pan won't get touched.
I have mine in the garage where most my prep work and cooking gets done. The smoke generated is no problem when I can have the door open but I'm going to put a hood vent in and vent it outside because we have about 7 months of winter up here and I cook out there all year.
Having the garage door open and the heat on at the same time is a bit counter productive!
Yup, categorically! If I had cooked this all inside, I'd have several CI skillets, stove, range hood, countertops, etc. all to clean up, ugh!
As was, had 1 spatula, one chef knife, 1 cuttin board, 1 bowl, 1 whisk, an 1 fork to contend with.
The grease catch channel has a hole drilled in the end and ythe grease drips into a catch can of some sort. Not sure on the Black Stone but here is a pic of my Camp Chef with the grease catch cans in front. You just use your spatula to push the grease down the channel into the hole. Gotta be careful the hole doesn't get plugged up with food bits.

Doubtless, they's still some out there, but, as I reckoned when $250 started, it was a clearance, makin room fer th new model.
If ya find them at $250, still a dang good deal, in my eyes.
If patio space is an issue, these actually fold up, to transport, or stow away...

We're getting ready for camping this weekend, and after looking at these pics I searched CL for a griddle. I found a small camping one and my wife said go for it, but it had already been taken. So... I sent her a link to the Blackstone 36. The (text) conversation that followed:
Her: Is that a joke?
Me: Yeah
Her: Very funny
Her: Maybe for Christmas
Her: Maybe
So I think I'm getting a griddle for Christmas! Now I have to figure out how to use it in the rain...
