    Had my 36" Blackstone for 5 years now, cooked everything it feels like. Trick is keeping it clean, dry and covered. Agreed, a wide, flexible drywall knife makes cleaning much easier. "Diner burgers" are the reason I initially bought the griddle--super delicious and always a crowd pleaser. If you do these a lot, it's worth going to a restaurant supply store and investing in a legit burger turner. Sharp edge, super sturdy and just the right size for burgers. A common problem I've noticed with the Blackstone is the grease running under the drain channel and dripping down the leg or around the grease tray. Just get a 5 or 6" nail or bolt at the hardware store and run it through the hole into the tray. Grease will cling to it and run down into the tray. Problem solved. Also agree with above comment that prep is key, especially with stir fry and other dishes that cook hot and fast.

      Oh, too much fun! Baking with Steel!

      Here we have the smaller one (1/4 inch thick / 15 lbs) on the cooktop. Trying different methods to get the "perfect grilled cheese". Takes a little practice to keep it between 275 - 300. Glad I have the IR.

      Love the steel for all kinds of things like pizza, garlic bread, hot-dogs (rock!), steaks, etc., etc.

        Good looking sandwiches! We bought the pizza steel to up our pizza game but have now discovered how versatile it is with other foods. It basically resides permanently in our oven now.

      As far as cleaning the griddles I have a squeeze bottle full of water handy. After all the food is done and off the griddles I deglaze with water. Squirt on some water wait a few seconds and run the scraper across the griddle and it's clean. Follow up with a wipe down with paper towels. Coat the griddle with a little oil while still hot or at least warm and your good to go for the next time!
