Had my 36" Blackstone for 5 years now, cooked everything it feels like. Trick is keeping it clean, dry and covered. Agreed, a wide, flexible drywall knife makes cleaning much easier. "Diner burgers" are the reason I initially bought the griddle--super delicious and always a crowd pleaser. If you do these a lot, it's worth going to a restaurant supply store and investing in a legit burger turner. Sharp edge, super sturdy and just the right size for burgers. A common problem I've noticed with the Blackstone is the grease running under the drain channel and dripping down the leg or around the grease tray. Just get a 5 or 6" nail or bolt at the hardware store and run it through the hole into the tray. Grease will cling to it and run down into the tray. Problem solved. Also agree with above comment that prep is key, especially with stir fry and other dishes that cook hot and fast.
