So, after cooking on a 36in Blackstone and few others that have differing cooktops my overall impression is meh. It is slightly better than a gasser grill because you can cook different things. However, I can't help but think I am a short order cook at DQ. So far, the highlight has been this morning cooking a big batch of stuff for breakfast tacos with me on the deck shirtless in my underwear... I won't assault your sense with a picture..

Weber Performer Deluxe
SNS
Pizza insert
Rotisserie
Cookshack Smokette Elite
2 Thermapens
Chefalarm
Dot
lots of probes.
Fireboard
To each his, (or her), own, but I'm glad I got one. It excels at quantity, but it's also very versatile. Try cooking teppanyaki on a stove with 2 or 3 proteins and have everything finish close to the same time...

If I had to pick one cooker it would be the flat top. Use it daily. That’s why there are so many different cookers to choose from. Whatever works best for you and your situation.

I'm with you. I don't have a blackstone, but I have múltiple flat tops to go on my gasser, PK360 and the camp stove. Their great for parties and basically tacos, but anything else...meh. Glad to see others finding a good use for it.

Large Big Green Egg, Weber Performer Deluxe, Weber Smokey Joe Silver, Fireboard Drive, 3 DigiQs, lots of Thermapens, and too much other stuff to mention.
75% of all my cooking gets done on the flattop now. Almost anything that can be done on the stovetop that doesn’t need a sided pan gets done on the griddle instead. Plus cheesesteaks, quesadillas, sautéed vegetables, stir frys, hash browns, burgers and dogs… pretty much everything. Every meal, including breakfast.
As long as it’s not raining, or snowing, first choice is the griddle.

I felt pretty much "meh" about it too when I had the griddle for my camp stove. It was just ok for limited things. So I thought. Then I got a dedicated one (one I didn't have to put on and take off all the time). Now I really enjoy having it and I cook on it more than I imagined I would. Heck today I had an abundance of zucchini from the garden and sliced it for zucchini lasagna and it was great to cook the slices on the flat top to draw out some of the moisture before assembling the lasagna. I'm finding all sorts of ways to use the flattop.

I love mine. I don't use it nearly as much as some here - I'll go a few weeks using it once or twice a week, then I'll not use it for a few weeks. But still worth having. Hell, for smashburgers if NOTHING else.

- If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
I've not used my griddle like I should this year, but all in all, I prefer my Camp Chef griddle to my Weber Genesis II gas grill. I think I can do a great job with anything EXCEPT bone in chicken or big roasts, using the griddle. And it keeps all the mess and grease outside, avoids dirtying a dozen pots and pans, and is just fun to cook on.
That said, I've not used it much this year. I've just been less motivated to cook in general due to life circumstances we are dealing with, or stand over a hot griddle in 100F heat. Last cook was July 4th, and I flipped burgers, dogs and brats on the kamado, so that I could close the lid, open 5 minutes later, flip the burgers once, close the lid, then open 5 minutes later to pull the food. That seemed better than standing over the griddle getting grease spattered on me, wearing an apron, in 100F heat.

Current line-up of cookers: Oklahoma Joe's Bronco Pro, Masterbuilt Gravity Series 1050, Blackstone ProSeries 4 Burner 36" griddle, Weber Performer Deluxe and Weber Smokey Joe.
My only regret with owning a 36" Blackstone for the past four years is that I don't have the time to cook on it more days per week than I already do.
