    I’ve come to the conclusion that a grill is completely unnecessary. All you really need is a high capacity smoker and a griddle grill.

    Nobody has mentioned thick cut bacon yet. So be sure to do that right after the onions.

      I’m going to pick up a pork belly next week for some homemade bacon…and yes, as you show….will fill up the griddle with all that porky goodness!!!!

    I picked up a nice accessory for the griddle recently - these stainless wind block attachments that go on each side as well as the back. So far, they have done pretty good. I’m pretty lucky to have the patio that we do, as it really blocks the wind but there can still be a slight breeze that comes through. I don’t know how much it effected the flame/heat but I’ve noticed the griddle seems to be cooking hotter than what it was, so I do think it is holding in the heat as well. So that has been nice to cook with! And they are magnetic, so makes a nice custom fit compared to what Blackstone sells that sit on the side of the griddle edge. And they work well with the grease bucket that hangs off the back on this model.

    Now, I did say these were stainless but after a few cooks, these things are already discoloring, so I don’t know how “stainless” they actually are. For $25 I don’t know what to expect and reviews did mention this happening. I’ll see how bad it gets and go from there.

      I couldn't find any at the time that would fit mine, except some that I researched and they had lots of complaints, I think it was warping or something. So I bought some flat bar stock aluminum at Lowe's and made my own. They've been in place several years now and they made an AWESOME difference in helping keep my side shelves MUCH cooler AND in keeping more heat in under the griddle surface. #1 mod for SURE!

      DogFaced PonySoldier - that’s the other benefit I didn’t mention - the heat stays off the shelves! I didn’t really feel much heat as it was on the shelves, I was able to leave stuff on there but now it’s even better!

      Next mod is rigging up the hard cover so it’s attached and lifts. I found a slick YT video that shows how to do it using a few angle brackets.
