Just Got My First Gas Griddle

    Well, just finished my first cook on it, and…..I love it! I just finished an Asian stir fry on the griddle and it came out darn good! This was only one cook of course, but I don’t really see anything happening to change my opinion, short of any cooker malfunctions. I did an easy chicken and vegetable stir fry with some Teriyaki Sauce and Pad Thai Stir Fry Sauce added to the vegetables as they cooked. The aroma was something else!


    The size of my 2 burner griddle is 23” X 18 1/2”. I feel like this would be plenty big enough to cook for 3-4 people. I had plenty of room on the griddle left over for more veggies and meat, and the amount I cooked was enough for 3 servings. Unless you regularly cook for large groups, this 2 burner would be enough for a family of 3 IMO.
    The ceramic cook top was amazingly easy to cook on, and clean up afterwards. One of the drawbacks to me not getting a griddle sooner, was the prospect of cleaning up afterwards. With this Pit Boss, I just wiped it down with a few paper towels afterwards and most everything came right up, no scrubbing required.


    While I was cooking on it, NOTHING stuck to the griddle surface, even on its highest setting. And, the chicken still got a good sear on its surface. My onions didn’t burn or turn black either! They caramelized perfectly.
    One of the main features I liked was the high walled back and sides of the griddle. I could easily maneuver the food without fear of losing it over the edge, such as a circular griddle without sidewalls can do. I didn’t have to be too careful when flipping or turning the food.


    I also did a quick temperature check in the 4 corners of the griddle to see how even the temps were. This was just a one time test with food on the griddle and at its lowest setting. The results were: Front Left 282*…Front Right 308*….Back Left 285* …Back Right 257*. Close enough for me, since I was drinking. 🥸 I’ll do a more thorough evaluation another day. Also, the 2 side shelves are very handy, used both of them. Can’t have too many shelves in my opinion. This is a great gas griddle and I highly recommend it if you’re in the market!

    Panhead John Does the griddle have any adjustments to level the cooking surface? One of the hassles I had with my Blackstone, which is the 2-burner tabletop version, was having to shim the feet so that the grease and oil did not pool in a corner. It is still not 100%, as I imagine most would not be. MCS is gnawing at me as the Blackstone is getting long in the tooth, and the griddle portion is starting to rust on the underside. The Pit Boss ceramic surface would make that a non-issue I think. Plus the storage and shelves versus the small table my BS sits on would be nice.

      GolfGeezer Go ahead and get that credit card out…..Yes! The bottom of the griddle itself has an adjustment bolt on each corner. You can unscrew each one individually to make any adjustments……May I recommend the 3 burner model for you?

      Hah! I'm already waffling between the 2 and 3 burner models! Of course, the 3 burner is a couple of hundred bucks more than the 2, but......

      And my bride already claims my CC is too ready to roll. Every time she sees I'm on Amazon, I can feel the glare!! 😎

      This might go without saying, but check as many sites as you can. I found the prices varied as much as $100. But be sure and check for any shipping charges. One place was $175. for shipping. In the end I bought mine from Amazon because of free shipping.

    Glad to see you joining the ranks of backyard griddlers @Panhead John!

    I go through phases where I use mine more and less, but right now I am swinging over to cook anything on it that I possibly can - basically anything that isn't being smoked, or any meat that is not thicker than an inch, or stuff like bone in chicken.

    Surely you were not actually cooking at temps in the 250's were you? I usually run the surface around 350ish, but it will cool down some when the cold food hits it. Do you think those corners were cold spots on the griddle?

    EDIT: I see you mentioned it was on the lowest setting. That probably explains the < 300 degree temps in the corners.

    My son-in-law got his Cuisinart 22" round griddle late last week, and I think they lived off it over the past 4-5 days. I guess when you have a griddle, everything looks like a pancake...

      Jim, I can actually see my wok getting lonely now. I started out the cook with both burners on high. Didn’t get any temps then. Once the cook was almost done, I turned em down low. I will be doing more thorough testing of the temps soon, and without food on the griddle, which could skewer the readings a little.

      Panhead John yeah, my wok really only gets used in the winter or on rainy days, when its too much work to go outside and use the backyard flat top.

    That looks great. Is the entire griddle top made of ceramic, or is it another material coated with ceramic?

      Here was my seasoning process….turned both burners on high for 5 minutes, just to burn off any new manufacturing residue. Just out of habit, I wiped a little canola oil on the surface, but really didn’t need to. The end.

    The recommended type of utensils for the griddle is a high temp silicone or nylon spatulas. Metal spatulas are not recommended to use on non stick surfaces. I just bought this 3 pack the other day from Amazon. They worked very well and as a bonus…..hardly any food sticks to the surface of them. I can recommend these for anyone getting this type of griddle. They have a lifetime warranty and according to the Amazon reviews, great customer service.

    I went looking for one today after see both posts, Canadian Tire did have some but my local store did not have any stock, so I will check some other stores next. I think I would want the two burner model like Panhead John has as there are only two of us here.
    I also saw a pizzacraft Pronto 14” pizza oven for sale that interested me as well, I need to do more research. I have enough points on my credit card to get one now. The box says it gets up to cooking temperature in ten minutes.

    I am looking hard at this....(so many things on my wish list!)

    The ceramic cooktop is alluring as I am just convinced that a traditional Blackstone top would rust in my environment, even if I kept the thing in the garage.

      I’ve never dealt with Pit Boss before yesterday, but I gotta say they’ve got great customer service! On one of the side shelves it has a garbage bag holder that slides out from under the shelf, if you want to hang a bag. Mine won’t stay in place when I lower the shelf, it slides out when the shelf is in the folded position. It looks like they’re supposed to be held in place by a magnet. I just called Pit Boss customer service about my problem. Instead of making you stay on hold, they give you the option of a call back…yes! Well a gentleman named Zac just called me back. After a couple of quick questions from him, I explained my problem. He said….well that’s not good, sorry you’re having a problem. He explained that he can send me a new shelf at no charge, no pics needed, nor do I need to send it back. Thanks Zac and Pit Boss!

        Ok, I’m sure y’all are sick of my griddle posts by now, this will be the last one for a while. Blackened catfish and taters with onions. This thing really is a breeze to cook on.

        jfmorris This is my go to blackened seasoning, never made my own before. I’ve tried many others out there, including Paul Prudhomme’s. This is the brand I like best. If your local grocery store doesn’t have it, Amazon does. Louisiana Brands also makes really good fish fry mix and tarter sauce. For these 3 items, I always buy their brand.
        I like to add a healthy dose of Tony’s to their fish fry mix, spices it up a bit.

          Thanks! I'll keep an eye out for it. I've always liked that brand. I've got a huge gallon sized jar of their seasoned fish fry mix in the pantry - in fact, I saw my 80 year old dad eyeing it when he was over helping me paint, and we had emptied the pantry, and I sent him home with half of it in a zip lock bag - he likes to fry catfish outside on the side burner of his Weber Spirit gas grill.

          Panhead John Unfortunately my membership may be at risk. We are just starting on having our house painted and all outdoor cookers have to be moved and stored while our deck and patio cover are painted. Of course, I rationalize that some good deals could come in the Fall when, to most folks, outdoor cooking is "over" . The urge is still strong - may the Force be with me!
