I have a Jubo Joe with a Slow and Sear basket and a 18.5 WSM. Malcom Reed suggests that I cook the bacon wrapped turkey breast @ 325. Test cook in the WSM was 275 using hardwood chunks. Does any one have a hybrid configuration that I could build with those parts to get to a steady 325?
It looks like the WSM will do 275ish with KBB and no water. I can get there on the Smokey Joe with a basket full of hardwood, but one side will be roasted from being too close or over the fire in the basket. .
Only thing I can suggest is to build some kind of barrier/shield out of tin foil to protect the meat.
Also give it a quarter or half turn every 45 to 60 mins.
I reverse seared some pork chops last night on the WSM with the SnS charcoal basket full on the bottom grate. Took a little while to get the temp dialed in, but I think it going to work just fine with the charcoal basket about 3/4 full.
