The other day I did some back back ribs on the 22†kettle. It’s been along time since I usually cook all my ribs on my pbc. They turned out nice! I cooked at 275-300 using meatheads Memphis dust. It was also the first time using fogo charcoal which I’m really impressed with. I never wrapped these ribs and mist throughout with apple cider vinegar and Worcestershire sauce. I used cherry wood chunks which produces great color and taste. Toward the end I blasted the ribs with butter and my homemade bbq sauce. Can’t wait to try these again.
