    Thank goodness for MCS!

The power went out today a few hours into a pastrami cook on my pellet smoker. Just great. Electric company says power won't be restored for another 3 hours or so. Of course, the pellet cooker is pretty much a paperweight without electricity. Never fear! A good case of MCS insures there's an alternative. Weber kettle with SnS to the rescue. Another hour or so and my pastrami should be ready to steam. And BTW it pays to keep a ready supply of charcoal on hand. Just sayin' .

total justification to go get yourself a generator so that the beer fridge stays cold should such a calamity arise again down the road.

Great way to save the day with the old Weber Kettle! Having a cooker that needs no power is a good thing to have. I probably would have fired up my generator though, before I thought of lighting some charcoal! . Your solution is easier.

Well, the pastrami didn't seem much the worse for wear after its adventure (I didn't think it would). I pulled it from the fire at about 155 IT and put it into the fridge until I could steam it. A half hour in the InstaPot and we had really good pastrami for supper.

The pellet cooker is only about 2 years old, although it's not my first. The Weber, on the other hand, dates back to the 70's (with some parts replacement and mods!).
