    Air temp probe in 22" Weber Kettle

    Where does everybody position their air temp probe when using the SnS on your Weber Kettle? Also how to you route the cable.

    This is where I usually put it depending on what I am cooking. The perspective in that pic makes it look closer to the SNS than I think it was. 4 or 5 rungs down on the grate from the SNS is what I shoot for. When it gets crowded with 2 pork butts or a big brisket I just find any spot I can that isn't touching the meat and isn't right over the coals.

    And I just run the cable out of the grill away from the heat and not touching the meat.

      I keep mine much farther from the SnS.

      For a reverse sear like I did with these Teres Major I would rather have the probe read a bit hot and the temp by the meat be a bit too cool than the other way around. That is why it is a bit close on this cook.

    I position it wherever I can find space. When I am smoking meat in one of my kettles, it is usually pretty full.

    I wire it under the lid. I was initially concerned about the wire crimping but it has yet to be a problem even in the 26 which has a lid that is considerably heavier than the 22.

      I try to get the probe within about 2" of the meat I am cooking, it's a proximity thing. I have Weber probe ports on my grills so they go directly through the ports onto the grill gates or meat.

        I have a 26 inch kettle with SNS. I made a probe port - drilled a hole near the handle using a step bit and threaded a stainless steel cable gland through the hole (but I removed the plastic inside part of the gland because of the heat). Some people have done the same but instead of a cable gland, inserted a rubber probe port that is used in the WSM.

        I used this as my port:


        I run my cables through that port. I keep my grate temp probe off to the side, away from the SNS, and away from the meat.
