Occupation:- Healthcare- Licensed & Registered Respiratory Therapist (RRT) at MyMichigan Health, a University of Michigan Health System.
I use ABC's SnS Charcoal Basket for the 18. I like it because it's not vented, more of a direct/indirect barrier is created with it compared to the Weber baskets, so more of my heat is forced upward and therefore in the natural pathway over the grate and upward and less of hot spot is created in the center for this reason.

I just bank the coals. I find that the Jumbo Joe struggles to breathe at times so I don't want anything on the grate that is going to prevent airflow. I looked at the SnS for the 18 but for me it takes up too much grate space considering oftentimes I am running the Jumbo Joe to its absolute max in terms of capacity.

The metal is the top of one of those broiler pan that come with kitchen ovens. I usually cover it with foil to make clean up easier. It isn’t a SNS, but it works pretty well. I have also discovered that can set one of those oval pans over the side without coals and move cooked food there until everything is cooked. It makes serving a breeze. It works really well when cooking meat and vegetables for two.
