I bought a PBC and a Weber Performer last year to replace my old CharGriller (not a great cooker, but I liked them and made some good food on them..). I love the PBC for sure..but I have to say the Performer with the work surface, one-touch cleaning, and the charcoal baskets and great cooking results is a winner. I can get that thing to 550F easy and cook fantastic steaks, fajitas, chicken, sausage..etc. I knew the PBC would be great, but I don't think I expected the Weber to produce traditionally grilled items like steak that were so much better than I could make before on the CharGriller. Really happy with the product...

- If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
native_texan I have to agree with you whole-heartedly about the Performer. I picked up a used Performer Deluxe that happened to include a full set of Grillgrates from a buddy last summer. I basically stole it from him for $100 - his wife had told him something had to go before his new Yoder smoker showed up on the back porch.
I had an old Weber beat up kettle I used when I needed to go grill away from home, but kept most of my grilling on my big offset or my Weber gas grill. Since I got it, the Performer has become my absolute favorite grill ever, and my most used grill. I cannot say enough good things about it. Low and slow, or hot and fast, great temperature control, along with lots of storage and a huge work surface make it an awesome grill.

My Performer is an older "Deluxe" model and does not have the timer, but it does have the propane starter for the charcoal, and I find that VERY useful. I have this hose, and use a 20lb propane tank with my Performer: https://www.weber.com/US/en/accessor...s/adapter-hose

I agree! I have had my PBC for several years, but just got a Performer around Black Friday this past November. Stumbled into a great deal, my local Lowes doesn't normally stock them and someone had special ordered one and not taken it, so they knocked it down to $90! I couldn't give them my money fast enough. Have you gotten a slow-n-sear for it? If not I would definitely recommend at least considering one, I've loved mine so far. I am usually only cooking for my wife and I, and other cookers take a relatively large amount of charcoal for smaller pieces of meat, so the performer with the SNS has been perfect for us.

WOW. You got an AMAZING deal on that Performer.
I agree the Slow 'N Sear and Drip 'N Griddle are great accessories for the Performer. If he is doing all his smoking on the PBC maybe not as much, but I've used the DNG to fry bacon even, and love using the SNS to sear steaks, as well as slow cook.

Hi, my name is Darrell. I'm an OTR truck driver for over 25 years. During my off time I love doing backyard cooks. I have a 48" Lang Deluxe smoker, Rec-Tec pellet smoker,1 Weber Genesis 330, 1 Weber Performer (blue), 2 Weber kettles (1 black and 1 Copper), 1 26" Weber kettle, a WSM, 8 Maverick Redi Chek thermometers, a PartyQ, 2 SnS, Grill Grates, Cast Iron grates, 1 ThermoPop (orange) and 2 ThermoPens (pink and orange) and planning on adding more cooking accessories. Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.
Yelp! The Weber Performer with the SnS, DnG, Vortex and GrillGrates makes it a great cooking machine.

The SnS takes the Performer to the next level. Yeah, it is really nice for kettle smoking, but where it really excels is 2 zone cooking. That sear zone is nuclear hot.

Yes, when cooking steaks outside, the SNS is the only way I will go now. Fill up the SNS with glowing hot coals, run the steaks on the cold/indirect side until they are maybe 5-10 degrees below where I want them, then pull the lid off and sear both sides over nuclear blazing hot coals right over the SNS.
