    Prime Time

Armed with a fist full of dollars and a cooler in the trunk, headed out to Amish country for some heritage train riding and meat - with a stop for ice cream wedged in the middle.

Picked up some apple and pork sausages, two turkey legs, a nine pound rib roast, and a 12 pound flat.

Inspired and motivated by the video from Adrenaline BBQ, I prepared and cooked the rib roast pretty much exactly as instructed. Words can't describe the taste so I'll leave it at the only two pictures that time allowed.

I could have done a better sear and as in the video I mentioned, silicon gloves would have been perfect to flip and hold the meat while searing. It was tricky with a turner and tongs and almost lost it a few times. No complaints with taste and texture but after eating, went right on Amazon and ordered a pair of gloves

This was just cut. Within 30 seconds, it became apparent that I need a cutting board that can catch the juices. The juices made it down the counter and on to the floor, but no worries, the dog did his part to help clean it - so fast, no camera in the world would have captured it.

That roast looks delicious. I should know not to look at this site when I'm hungry. Now I have to go get some prime rib for lunch.

That looks awesome. If you're interested in a handcrafted, local made board, you could check out a small woodworking shop in Lancaster County, it's called George's woodcraft....I think. You can get large hardwood boards that are beautiful. I've got one. I put a plastic cutting mat under the meat so I don't tear it up. It has juice grooves routed along the sides. It a mom and pop place, but it's high quality. A bit of a drive for you though.
