So I was able to pickup a used (looks like very little use) 22" Kettle for $60 last weekend. I ordered and already received a Lavarock gasket and a SNS. Got some friends coming over tonight and going to smoke some drumsticks, thighs and a lot of wings. I am about to go out and drill a hole for my ET733 probes and put the gasket on. I've got a bag of blue Kingsford, a chimney starter, chicken and plenty of beer!!!! My brother is coming over and I believe will try to replicate the recipe of the Voodoo daiquiri from Jean Lafitte's on Bourbon St.
Good thing all the reviews say the SNS is virtually fool proof!! I'll post up some pics of my mods and the cook later.

Good luck tonight! Make sure to follow the directions, closely and make small adjustments to your kettle when setting temps. Keep us posted and let us see some of that grub! Especially, those wings.

Every time someone comes up with something foolproof, someone else comes up with a better fool... And I may or may not have been that "better fool" at least once....
This should be an easy cook at any rate. Just remember to shoot for 325* + for pit temp when cookin' chicken.
Congrats! I recommend running it with vents wide open. Chicken cooks perfectly well north of 400 degrees, especially with the skin on. I do NOT recommend putting water in the reservoir for this kind of cook - you will be inviting problems. The water reservoir is for low/slow cooks.

First off the SNS was amazing. I put almost a full chimney of lit coals in it and a couple chunks of hickory and had the bottom vent about 3/4 open and when it came up to temp, it was 319-334 the entire cook on my ET733. I didn't have to fiddle with it at ALL. Gonna do a rib cook next weekend. I hope it'll hold 225-250 as easy.
So there's some pics of my mods...wooden top vent adjuster, plus the hole for my probes. A pic of them going on and one of them being served. Can you tell which platter came off the slow n sear and which came off my natural gas grill with grill grates? I even bacon wrapped a few drumsticks and thighs....that was a big hit! The chicken off the SNS was DEEELISH! Tender and juicy with the skin a little crispy. The grill grate chicken was just as tasty with crunchy skin. Everyone went home full.
I didn't get a pic of the prep, but I simply sprinkled on some kosher salt about 10 yesterday morning and then put some of Meathead's Memphis Dust on them about 5 and threw them to the coals about 630.
There are quite a few purchases my wife will question me about, but I can guarantee the membership fee to AR is not one of them. She is very happy eating some good Q with the info I have learned here!
One more mod! Got a Lavarock 3" diameter gauge so I can tell if it's hot without touching it....lol. I've got my Et733 to give me real temps though. Added a gasket to the lid and gonna run some ribs this Saturday! I can't wait. I can almost taste them now!
