Cooking Pork on a 22" weber kettle with SNS and DigiQ for 25 people

    so I ended up with a 20lb pack. I'm going to shoot for a 17 hour cook at 225. So they're ready to rest at 1:30 PM. Seem reasonable?

      You should be fine. I cooked for 20 people two days ago on a single Weber kettle with the SnS. I was a bit worried, but it worked out just fine. I still had some (but not much) space left. I did sirloin steaks, had 7 hunks of meat on (which I later sliced). I calculated 300 grams (11 oz) per person. I also cooked sweet potatoes on the same grill, as we were out in the woods. So I did all food on the same single kettle, in one go. Had to use the 'lower' grates for the foil-baked sweet potatoes to fit it all in.

        Sounds like you've got it. Just remember probe tender is what your shooting for. Not IT or time in cooker and let it rest, either in wrapped up in your cooler or the oven.

          I think your time is perfect. Just let the SnS do what it does and then the faux cambro will take it across the finish line.
