Lit it and Forgit it Baby Backs on the Kettle
Fired up the 26" Kettle for some Ribs, decided to let it run and not worry about temperature like I usually do. Started 50 KBB, set up a Snake 3 wide 2 tall added three chunks of Apple and let it go. Bottom vent at 50% top vent open all the way. It was about 70 overcast, light breeze. I used 2 probes, 1 probe ran 225 to 240 most of the cook the other was 260 to 280. I rotated and moved the Rack around two hours into cook, then rotated the Ribs and moved the rack again at 3hrs. The Ribs were done in 4.5 hrs, probe tender and measured temp of 200ish on both. Ribs came out great, and I got a lot of chores done while they were cooking.
