    Chicken Wings on the Kettle

    Friday's Request from my Daughter was BBQ Chicken Wings.Marinated 40 Wings with Chiavettas Marinade. Cooked around 325 for about 15 min per side, then a quick sear. 20 Slathered with Sweet Baby Rays, then back to the heat for a quick turn. They were a great success, and everyone enjoyed them.

          That is the way I cook mine - 325 and 15 minutes on each side. I don't sauce and I can cook them with direct heat on my BGE with an elevated grate.

            They were very crispy, but not dry. The sauce was Mandatory on my Daughters Wings, my wife and I will dip them in Franks Red Hot.

            Pirate Scott crispy is why I like doing them at 325. Sometimes just salt and pepper is wonderful. Other times I use other rubs. Smoked tastes good at 225, but I don't like the rubbery skin.

              I think I might have to give wings a try this summer. My to-do list for 2017 includes smoking a duck and beef ribs. There's room for chicken wings. Thanks for the inspiration. They look great.

                  Pirate Scott is that a 22" Kettle? I'm thinking about getting a kettle and dumping the gasser altogether soon. I've got PCB too, but it looks like you have the perfect surface area there for the stuff I'll normally cook.

                    It is a 26", and I love it. If you don't need the space the 22" is less money.

                    Thanks Scott. Many moons ago I went to gas for small grilling as a convenience. But now that I'm stocking Kingsford for my PBC like it's gold and getting back used to it...I find the gas experience kinda cheap.
