    SNS & Kettle is winning:
    1. better temperature control.
    2. easier cleanup.
    3. Weber kettle doesn't collect rainwater during bad weather cooks.

    Pictured here is my slow n sear, weber 22.5 using lump charcoal with 5 pounds of beef plate ribs. I expect it to be a 9 hour cook. Will report back when it's done.

          +1 on the Weber Kettle, SnS, and DnG combo. I used to use foil and a drip pan, but the DnG really adds an additional amount of temp control to the already-nice SnG.

        Just hit the 6 hour mark. I had to add water to the reservoir and some more lump. Internal temperature is 187 and pit is at 230

            Turned out well but had a slow-down:

            Lump charcoal stalled out in mid-cook. I had some very large chucks in the SNS and apparently it just didn't have enough heat to catch and burn. Has anyone else had this issue?

            I used lump because there's less ash but it appears that kingsford may be the best way to go on slow cooks. This added about 3 hours to my cook. frustrating but my sons stuffed themselves so it was worth it.

                      I quit using lump a couple years ago when I had it stall out on me like you mentioned. I've been using KBB every since for all of my cooks and I don't have that issue. Considering switching to either B&B natural briquettes which they carry at my local Academy Sports or the new Weber Briquettes which I've read great reviews about. I haven't read great stuff about the B&B natural briquettes but their price is great, $10 for a 17.6 lb bag regular price. I have seen some positive comments about B&B on these forums so I may just have to try it at that price. Nothing to lose IMO.
