At this point, I have speak up for the Chargriller Pro with the side firebox. Yes, it is a COS, but if you learn to master it as a smoker the versitility it offers with the top rack is unbeatable for the price. I can cook entire meals, protein, starch, veggies, the works on it. Capacity is more than enough for the average dinner party. I've posted plenty of cooks using it like that. The largest cook I did on it for protein was 5 pork butts. The only issue I had was having to rotate them every hour or two to ensure even cooking.

I once did a cook for about 20 people on it. I had to bring the kettle into play to handle the veggies on that one.

OTOH, a kettle can handle anything a normal family would need, just don't expect to do it all at once like you can on a reasonable offset, even a COS.

I used to have the Chargriller Duo with the SFB and for the money it did give you a lot of cooking capacity.

Here's an example of how much a hover grill can add to your cook:

I have a 22" and SnS and have cooked 4 whole St. Louis cut racks at once with room to spare. Just bend each of them into a circle shape and secure with skewers and lay them on one edge. Flip and rearrange every couple of hours or so for even cooking.

If l'm cookin for more than six, l'm going to my PBC. I'd cook for a pretty good group if l was doing dogs & bergs with my hovergrill on the 22, but 3 or more chickens or 3 or more full slabs of ribs, l don't see the need to pack things that tight. I like a little breathing room.

For ribs only, with no hovergrill, I've done 3 racks in a Weber rib rack. The rack nearest the front of grill needed a couple ribs trimmed, but there was a little room left to lay it flat.

Three racks for me, too. I cut a couple of them in half and puzzled the whole thing together.

        Just three, huh?

Great idea Pit Boss!! I think I'm going to try this technique but how do you know when they are done? I usually pick up a flat slab of ribs and use the bend test to see if they are done.

David Parrish When you bend them do they take longer to cook? Bark just as good?

I thought they were as good as ribs in a rack. When possible, I always prefer to lay the ribs flat on the food grate. They're better that way.

Here's 5 fairly large split chicken breasts ready for the final char over direct heat - SnS under the GrillGrates. Good thread! Great info and pix! Bookmarked it! Thanks, -- Ed
