    Alton Brown Turns BBQ Chicken Into a Science Project

    Alton Brown’s latest experiment shows what recipe testing really looks like—and it involves a round charcoal grill, chicken, temperature gauges, constant grate rotation, and enough notes to make a laboratory technician proud.

    Instead of simply lighting the charcoal and hoping for the best, Alton maps how heat moves around the kettle grill. He monitors the temperatures, rotates the cooking grate to move the chicken between hotter and cooler areas, observes the results, and records everything. Then he adjusts the setup and tests it again.

    The spinning grate is the clever part. Rather than grabbing and relocating every piece whenever the coals flare up or the heat changes, he rotates the entire grate. The chicken can be moved over direct heat for browning or away from the coals for gentler cooking.

    The big takeaway: a round charcoal grill isn’t one uniform cooking zone. The fire changes, different areas run at different temperatures, and successful grilling requires observation and adjustment—not just following a cooking time.

    It’s part barbecue, part geometry, and part mad-scientist notebook. Alton’s basic formula:

    Hypothesize → Grill → Measure → Rotate → Take notes → Tweak → Repeat

    Watched the entire episode. Alton is a great chef and entertainer. IMHO, his method misses the most obvious uncontrollable variable by using lump charcoal. He should have used B&B briquettes..or even KBB to get more stable and repeatable temperatures across the two tests.

      I really enjoy Alton! Always loved his Good Eats series because he talked about the science and did it in a fun way.

        I had temp mapped my kettles several times for various fire designs, it was crazy seeing some of that.

        Im sure Alton takes it to another level, i just measured 3 different zones.
