Since I made my summit my daily driver this spring, I’ve been playing around more with it, and have found a new enjoyment in learning what all can be done with it.
My only 3 modifications were that I took the two baskets apart and use them for my charcoal management differently, added a SNS easy spin grate, and a hunsaker plancha.
Recently though I started cooking from the low kamado point, with much higher temp fires, and then cooking from the top grate over it. It gives you a chance to cook with wood and not always living in the flames, poor man’s Santa Maria per sé.
you can see in this photo I took the two curved parts of the baskets and have them going around the grill wall, and the two other straight vented pieces I can slide forward and backward and create the zone sizes I want. .
