    New Weber and SnS

    I don't know what has happened to me since joining the Pitmaster Club, but my food has gotten better and my equipment spending has really accelerated. I feel like that should be a disclaimer when people are looking to sign up, "Caution, BBQ spending may increase significantly!"

    Shortly after joining I got the Maverick 732, then a few weeks ago pulled the trigger on the new Thermapen. Then, about two weeks ago decided I would grill some steaks, which happens much less frequently than I would prefer, but mostly because I've been running my PBC through its paces for the last year. I don't trust the PBC for grilling, so I used my old Charbroil grill and realized what a piece of ____ it is. Honestly, before joining this site, I didn't know how bad it or the food I was turning out on it was. You all have ruined me.

    So I just picked up a lightly used basic 22" kettle on Craigslist for $40 and I got the SnS coming this week. Looking forward to some good grills and also using less charcoal for smaller cooks. I've heard a lot on here about the one-two punch of the PBC and the kettle plus SnS. Just don't tell me there is anything else I have to have, at least for a couple months...

      You sound just like me...lol

      I found this site and realized my 22' Weber alone wasn't going to cut it. I found another 22" Weber PLUS the guy threw in an 18" Weber kettle for $40 altogether. I bought a Smokenator to do low and slow cooks. I bought an ET - 732 to monitor temps, then got a PartyQ. Bought several more cables. My bro sent me a WSM. Found another WSM (with an extra mid section) on craigslist. Got stainless steel doors and hinges for the WSM's. Bought 22 bags of KBB at Home Depot. Joined the Pitmaster Club. Bought some quick read thermometers. Got the ET 733. Got another 22" Weber on craigslist. Upgraded to the MK4. Came to the conclusion that the Smokenator was limited as to what it could do so I gifted myself a SnS. Bought another SnS. Bought a house with a covered deck to house all of my BBQ stuff. Bought a huge stand up freezer that I will be filling with BBQ once the house gets done.
      Bought The food Lab. Bought Meatheads book.

      The next purchase will be a 26" Weber kettle and the XL SnS.

      I have decided against the Weber Summit Charcoal grill...for now

            I thought that was part (much?) of the fun of finding a new hobby (obsession). The opportunity to exchange money for the tools and toys that are absolutely necessary (as soon as you learn about them).

            It only becomes an addiction when you have to have at least one of everything you see.

            I bought that telescope years ago ($3K). By the time I had burned out on acquiring necessary "accessories" the bill was about $19K. At least I learned a lot. Can find all 88 constellations, know where all the neat stuff in the sky is, and can tell what month it is just by looking up. And I've gotten to see a lot of really cool things. And, my name is forever etched in the SEDS Hall of Fame as someone who has completed a Messier Marathon. Not many people on that list.

            Just make your purchases intelligently, and not on impulse and you'll be just fine.

            When I bought that thing, one of the jokes I was told was about asking old men what was their favorite thing to observe.
            Unanimously, they said "the sun". Why? It's cold outside at night. Looking at the sun can be done from your driveway, no need to go out of town away from the light pollution.

            Lesson - Think forward in time, and when you are contemplating a purchase, ask yourself if you'll still be using it 5, 10, 20 years in the future. If the answer is yes, then get it. If the answer is no, then pass.

            Besides, making your own great food is a bargain.

              Great true stories. I can relate big time. I'm "well equipped ", well at least for now. Once I sell my TN house I might celebrate.

                Do not fear grilling on your PBC. Try it. Side by side with your Weber. Put 2 steaks (or chicken breasts, bratwurst, burgers, salmon, shrimp, etc) on one and 2 on the other. I have both, and honestly, like the flavors and results off the PBC better. I know it doesn't fit AR criteria for a good grill, but I'm telling you, it rocks! Some things just work in spite of the rules.

                  That's a good comment. I have done things on the grate like drumsticks and salmon and they turn out great. I think of my PBC as better suited for longer cooks though. One of the biggest factors in that is the amount of charcoal needed. Maybe I'm overthinking it, but I'm excited to have both options!

                  PBCDad, If not in Your Equip Drawer already You Will definitely need a Good Dual Probe(Min) Digital Thermometer (Maverick 732 or 733) also You will a good Instant Read Thermometer like the Thermopen by ThermoWorks! They are on Sale 15% Off Right Now! Sorry You Didn't Get the Info Upfront but Good Que Takes Good "$$$"! But maybe you can Put Your First Born on EBay? 😙🤔😇🤔😙
