I am excited. I bought a new Weber 22inch kettle today. I got it for cooking hamburgers for my uncles 100th birthday party.
but I ma excited to also use it as a smoker. I have read Ron's article on setting it up with a fan.
So I most likely have many questions about using the kettle as a smoker or just a grill. I bought the premium version.
Large Big Green Egg, Weber Performer Deluxe, Weber Smokey Joe Silver, Fireboard Drive, 3 DigiQs, lots of Thermapens, and too much other stuff to mention.
I have the Performer myself. You will grow to love the gas assist for starting a chimney!
It smokes well, but they’re really all different. One will seal well, the next one will leak like crazy. Mine leaks; with all the vents closed, it runs 240°. I got some clamps, and with it clamped, and both vents open a crack… it runs 240°.
I got all the stuff to add a controller, but I haven’t installed anything yet. It looks pretty simple, though.
All I’ve ever smoked on mine is ribs, and they were excellent, as good as on the BGE. I wouldn’t hesitate to do brisket, pork butts, beef ribs, whatever.
Congrats, you will enjoy it. Like anything, little idiosyncrasies to learning yours. Like Mosca said, they all run a bit different. Now start saving for your 26 kettle, and more food to grill.🔥
The kettle is so versatile, you can do almost everything on it. Enjoy your new cooker. I smoked 2 chuckies yesterday with just the SnS and they were great. I have smoked butts, ribs, briskets, wings, turkey, etc. Yes, mine leaks a little smoke but that has not hurt anything I have cooked. I have a Vortex and a roti as well and I have not needed a blower/controller yet, but as always, YMMV. Enjoy.

There is so much you can do with a properly set up kettle. Fans are nice, but by no means required. Have fun with the new toy, and post lots of pics so we can enjoy the journey with you.
