I usually buy cherry wood from Fruitawood (or get Black Cherry from Spinaker ;-) ). A friend cut down a wild cherry tree and offered it to me. Can I use this for smoking after seasoning? I've heard that a few small pieces of green wood are ok and actually produces a lot of smoke - true or not? Any differences between this and the cherry wood from Fruitawood. I appreciate all the help as always!

Do you know what type of cherry tree it is? The name Wild Cherry can refer to any of several varieties. I have a lot of black cherry on my property, and it is great. I also cut down a sweet cherry for a neighbor a couple of years ago, and it was pretty good, but not as good as black cherry. Regardless of what variety it is, I wouldn't burn it green. If you go ahead and cut it into chunks it won't take long at all to season.

Look into whether you have button wood trees in your area. I believe you do. Its a coastal tree similar in habitat to the mangrove. It is considered priceless for smoking mullet, etc.
True. We do have buttonwood. I’m far from mangrove swamps and anything growing in one is likely protected. The wood makes excellent charcoal and smoking wood. Maybe I should try planting some to see how they do where I’m at.
Troutman strong words about Bradford Pear! Haha! I got some free Bradford Pear this weekend, and I thought I scored the deal of the BBQ century, but I’m just now realizing it may not be that good of a smoking wood. If it’s a horrible bbq wood, I’ll just burn it in my fire pit.
If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
Just make sure what variety it s. Here in Texas we have Cherry Laurel trees. Twigs, berries and leaves will kill a full grown cow in 24 hours. Heartwood is good and O.K. Very red wood color...pretty but be careful. Hard but cooks well.
