ThermoPro Joins Everyone Else and Publishes a Wood Guide Chart
Just thought I'd post another company's opinion on what we should be using on our smoked foods.
Pulled Pork is 205F, Brisket is 210F.
Yellow is HIGHLY RECOMMENDED. White is Tasted & Approved.
Interesting that only Alder is recommended for fish, Cedar isn't listed, and that Jack Daniel's is a wood.
I'd also like to take this opportunity to publicly announce, as other peers of mine have also chosen to do so this week, that I WILL NOT be running for President in 2020.
Scotch: Current favorite- The Arran (anything by them), Glenmorangie 12yr Lasanta, sherry cask finished. The Balvenie Double Wood, also like Oban 18yr, and The Glenlivet Nadurra (Oloroso sherry cask finished) among others. Neat please.

And yet another company completely overlooking one my most favorite woods to work with- ash. Tisk tisk..... Interesting that they say apple is OK for beef but they overlook apple for fish. Tisk tisk.
I admit I used a chart like this when I first started. Makes newbies feel like they have the secret keys to success. When you run out of some wood and in a pinch use what you have, then realize it tastes awesome, then you really feel like you learned something!
