    Pre burn your wood..

    Are you a pre burner or a toss a log in the firebox occasionally?
    I'm a dedicated pre burner,you can easily get the thin blue smoke and if you want to go a little heavier you can toss in a few rare chunks.
    I'm also a proponent of removing all the bark you can on the rare wood you toss in the box.

    And to top that off it's way easier to regulate temps.

    I would love to one day build a big brick pit and have a pre burn barrel that I could then shovel the hot coals into the pit!

    All you need is a fire pit from Home Depot. I built mine out of a an abandoned 500 gallon propane tank....of course I got two of em and two fire rings outta of it.

      The importance of pre burning is vastly underrated,unburned bark and even slightly damp wood is a death knell for BBQ.

        I preburn. I don't mess with bark unless it's loose or rotted, but I will scrape moss and lichens off if there's a lot.

          lonnie mac lichens are that greyish greenish, sometimes orange or white algea-like moss looking stuff that forms on bark, especially in shaded or moist areas.

          Been there done that, had some cherry that was smaller and not split and it smoldered and killed a brisket. Now putting them splits over the fire pot gives me perfect thin blue in my pellet assist stick burner.

        I do a little pre burn using the gas side burner on my gasser before I plop them in the PBC.

        Depends on how th' wood looks...
        Never worried me none 'bout no bark...

          My sentiments exactly... I can't envision a cave man looking at the bark and saying.. "That belongs on the meats and not the wood"...

        Always minimize the bark.

          Never had me no bad BBQ outta my stickburners, despite th' bark.
          It may, most certainly, vary on other cookers, with other wood types, etc.; th' variables are infinite....

          I disagree that bark hurts things. But it doesn't hurt to remove it if you want to that's for sure.

            Hover over your pit and smell the smoke from a bark covered log and get back with me.
            You're a fool if you put a piece of meat on that crappy smoke.
