Thank you so much for these! I have been using your site for many years, even since I burned down my garage after smoking a brisket LOL (hubby still lets me use my smoker). but that is another story! I appreciate all of the useful info here.

Well, so... it was Memorial Day weekend, and living on the lake, I did not want to babysit my brisket all day, so I got up in the wee hours, got my brisket on the smoker, once I got to the stall, I wrapped it and put it in my oven to get to temp before finishing on the grill (so I cheat, but it works!) so it was about noonish that I went out to clean out the smoker ( I use a gas Camp Chef) and the coals were cool.... just not even thinking about it, I threw them in the trash in the garage...

Continues... well I didn't throw them in the Metal trash can, it was plastic.don't ask me why I don't know.... by the time our neighbor saw it, it was in full flame up that whole side of the garage.. by the time the fire department got here it was pretty much a full loss. I kinda freaked out, but it really was the best brisket I have made to this day lol. Thankfully it was a detached garage, its now attached and really nice... sometimes you just need to make lemonade.
