    Mr. Bones taught me beans. I started my tribute on Saturday with making broth. I used bones from previous cooks. Roasted them with celery and carrots.

    Ribs, chicken, and brisket pics might or might not make it on here, but I am satisfied that Mr. Bones would have approved of this cook. (And the pic of my cat.)

    These bones are for you, Bonesy!

    I cut a St Louis rack out of a whole spare, and froze the trimmings to deal with a different day. I rubbed it with something I hadn’t used before: John Henry’s Honey Rib Rub, which is light in color, and has no paprika or other red stuff in it. It’s different, kinda honey-lemon, with sweet and salty.

    And it is a beautiful day here in NEPA, the wind has died down a bit, and though it’s still a little chilly, the sun is warm.

    Served with brisket beans and scalloped potatoes! No sauce on the ribs, but my daughter gave me a bottle of sauce for Christmas and I wanted to try it, so I put a little on the side. These ribs were great both with and without the sauce.

    Something a little different for the the Mr. Bones Memorial Cook today. A reverse seared Flat Iron Steak for a Steak Salad. We are having a busy Sunday but I didn't want to miss honoring our Great Friend. RIP Mr. Bones .

    For Bonesy some prime dino ribs, I think he would approve. Had a little Capt'n Morgan Reserve during the cook thinking of Bones. I pulled the beef rib bones out and then sliced in brisket thick slices, no sauce and the wife said they were fantastic along with some sauteed squash (no pic).

ID:	1397494 I also did some beef ribs today. This was a Prime grade rack of short plate ribs from WildFork Foods. My go to meat source these days.

      I hit them with Meatheads Red Meat Seasoning and Dry Brine last night. Then on the Recteq at 7:15 this morning with the RT running at 250. I pulled them almost exactly 8 hours later and they probed like butter. I wrapped them in butcher paper and put them into the kitchen oven which was set on “keep warm” for 2 hours. They were served with awesome onion rings from a placed around the corner from us and some microwave mac and cheese. I’m stuffed.

        Great tribute to Bonesy.

      My favorite Mr. Bones post was from 2018, when he won the Giveaway. He showed us his new deck built from the crate his new cooker came in.

      BBs were in the plan for today, but a delay of an ingredient from Amazon pushed the schedule. So what is this? A burger with no mustard, ketchup, or pickles in sight? Instead, sub sauce, mayo, and butter are the condiments. Oh, and it is better with process American Swiss cheese. It's my copy of a sub shop chain's burger from up north. I'll post a detailed writeup in the sandwich forum soon.​

        I've used the pallet from my new grill in several different ways. Currently it's keeping the dogs from hauling the heater out of the Koi pond. So far I've used the pallet more than the grill. That should change eventually.

      Mr. Bones you were what this group is all about. I hope that in some small way we carry on the tradition of kindness and brotherhood that you stood for with every post and every kind word. Here’s to you my friend.

      I took a couple slabs of baby backs to church in your honor and enjoyed some Cigar Box along the way.
