Ok, ya gotta try this!
After my hamburger tacos came out so good last night, with Cholulas taco seasoning, I decided to try this on some oven baked chicken wings. Mixed a packet of the Cholulas with 3 or 4 tablespoons of canola oil and a few shakes of Tobasco. Stirred it up in a bowl and mixed the wings with it all over. I then put the wings on a sheet pan rack in the oven on 400* for about 30-40 minutes.
Ready for the oven…

They were delicious! I had enough hamburger stuff leftover for another taco. My only nitpick is I didn’t get them crispy enough. I have a convection oven but forgot to hit the button for that. 🙄 Nevertheless, the Cholulas Taco Seasoning makes a great tasting coating for wings too. Trying it next time on the grill. Had the family over for a pizza party. Smoked some wings, finished them on the grill for a little extra crisp, then topped them with homemade white BBQ sauce.
The pizzas came out solid too, but I’m still dialing in the sweet spot on the Ooni between getting the crust fully cooked and not scorching the pie. Feels like every cook gets me a little closer though.

Kids came home from school yesterday and stated, 'we want musubi for dinner'. I had no better idea than that, so musubi it was. I started prepping and realized I donated my Spam to the food bank when we moved, so I had to run to the market for that. Made the teriyaki sauce from scratch this time; came out great and will do it again. Double batch, 14 pieces:
Not the prettiest pics, but they will do. I used two different kinds of furikake because I ran out. My DD didn't like the newer one, but my DS and I liked both.
Next up, pulled beef.

First attempt roasting coffee on HB. Took some McGyvering. This is the 2nd basket I bought as the first’s mesh was too big. The basket takes a 1/4” rod, motor = 5/16 so figured I would apply Liquid Metal but found it too runny then to slow to dry. In flash of brilliance I realized a section of bamboo I had would make a perfect mold which then needed filing to size. The latch is sketchy so paper clip to secure it. Had to buy collars. Previously was roasting coffee in a large skillet. Does make for smoother coffee.
Both methods produce a good bit of variability in color and degree of roasting. Skillet method works well though. See how it tastes tomorrow.

I love the setup. I've not roasted my own beans, though I worked for a coffee roaster for a couple years in another life. I've heard you can roast coffee in a stir-and-pop style popcorn popper, but I've not found one in my thrift adventures.
The coffee will continue to outgas CO2 for days, depending upon how you store it. Tip for anyone wanting to roast: do it outside or in a well ventilated area. Roasting coffee stinks, literally.
