    Grilled Teres Major (Petite Tender) with Roasted Fingerling Potatoes!

    Marinated the steak for about an hour while getting the grill set up. Grilled over high heat for about 2 min per side to get the color and char I wanted before moving indirect to finish off. Pulled off the grill at 127°F internal temperature then rested. ABSOLUTELY DELICIOUS!

    Chef Eric Gephart Steak Marinade:

    1 Tablespoon Ginger

    4 Cloves Garlic, Fresh Chopped

    ¼ Bunch Scallion

    1 Cup Soy Sauce

    ¼ Cup Sweet Chili Sauce

    1 Tablespoon Pickled Ginger Juice

    2 teaspoons Garlic Chili Sauce or Sambal

    1 Tablespoons Seasoned Rice Vinegar

    2 Tablespoons Olive Oil


    Marinade Method:

    Combine in a bowl and whisk to fully incorporate.

    Something a little different for me. Cajun Style Red Beans and Rice.

    The Beans were Rancho Gordo King City Pink Beans, The Rice was 1/2 Brown Basmati and 1/2 Rancho Gordo California Wild Rice cooked in bean water saved from another cook.

    The Beans were cooked with Onions, Celery, Carrots, plenty of Garlic and Mushrooms added last. Plenty of Cajun Spice.

    I did not add any meat...It still was delicious.

      Pink beans are my favorite bean by far. This looks terrific.

    A quick weeknight skirt steak and roasted broccoli dinner. Along with some Velveeta cheese that was doing its best to melt.

      After making cheesesteaks last night, I still had some thin sliced ribeye and a hoagie roll, so to mix it up made a kimchi cheesesteak (kimcheesesteak?).

      cooked up the ribeye with some onions. Once I got it browned and chopped up, added in some chopped kimchi and let it cook and meld together. Some provolone and a squirt of sriracha topped it off. Not the best pic but you can sort of make out the chopped kimchi amongst the beef.

      French Onion Soup! I just love this stuff! When Fall arrives, soup is on a regular rotation in our household. What are some other good soups and stews you recommend?

      Usually forget pictures and set phone reminder this time. Volunteered to do 140 lbs pulled pork for JDRF event. Here’s the gravity fed unit.

        Thanks for the comments, 200 attendees, also did 13 lbs smoked sausage with carmelized onions. They said it was great. Cooking & tending to smokers all night, my taste buds were toast and I couldn’t tell if it was any good.
        They asked me to cook for next years event & add more smoked sausage & onions!

      On Friday the 27th, teachers at our school are doing another pitch-in and we're a little late, but we're calling it Oktoberfest anyway. I agreed to make the brats.

      I'm always looking for the next brat recipes and I think I like this one. I'm cooking for a crowd that has a few lactose intolerant folks and I was looking for a no milk recipe. This one has German wheat beer as the liquid.

        Richard Chrz thanks. But there's a reason I'm not in the sausage making business for a career. The whole process took twice as long as I thought to make 72 sausages. My plan is to cook them at home on my griddle, vacuum seal, then SV bath that morning until serving time.

      Sunday I simmered 10 quarts of beef bone stock for soups, bone broth to drink through the week, freeze .. I also low and slowed a beautiful chuck roast all day.

      Now it’s the fun part. Whipping together a bowls of soup. Ciabatta would also go well with this. I’ll correct that later,

      Bone broth, seasoned.
      Chuck roast
      Carrots, potatoes, barley, green onion, and various herbs and seasonings​

        Ran two different temp zones (both with fire) in my Weber Summit

        SV then Fire seared sliced short ribs, seasoned with my Big Beef Blend.

        Lodge 15 inch Carbon steel Paella pan with mushrooms, onions, butter, add the seared beef, topped with young green onion sprigs from an herb garden.​
