Entering a comp isn't something I'm particularly interested in, but I have been interested in attending one as a "spectator". This one isn't too far from me so maybe this is my opportunity.

Scotch: Current favorite- The Arran (anything by them), Glenmorangie 12yr Lasanta, sherry cask finished. The Balvenie Double Wood, also like Oban 18yr, and The Glenlivet Nadurra (Oloroso sherry cask finished) among others. Neat please.

I will agree with others, trimming comp chicken sucks. I definitely need to work on the trimming.
You aren't kidding! I can't imagine how many thighs I'd have to do to get good at it, and that's just the trimming part!
What's crazy is when I'd talk to competitors and find out they buy 70+ thighs just to find 12 that are comp worthy, and only 6 of those will make the cut.
