Thanks for answering my questions @tstalafuseβ. Appreciate it. I've competed and a long time KCBS judge, so I love to hear how people do at a competition. I'm pretty disappointed with KCBS too, but for other reasons.
One event I remember, there was a competitor that had a brand new Lang off-set smoker. It was beautiful. Reverse flow smoker I think. Any way I had just put on my brisket for the night and went over to see his Lang. He had just put on 3 Waygu brisket packers. That is over $1000 of beef......for a competition. All I was smoking was one Choice brisket. I'll never forget what lengths people will go to in a competition.
