Here’s the end results — 10th chicken, 12th ribs, 8th pork and 9th brisket. 10th overall out of 13 teams.
Since I haven’t competed since last November and my chicken recipe is from 2009, pork presentation was new and my brisket deserved better. All in all, it was successful. I had a good time and won gas money to get home.
End of the month for the next one. I think I’ll do some practicing! Grand and reserve grand were both cooking on Jambo J3!

Thansk, fzxdoc! Only 13 teams! So there was one serious Team of the Year guy (he won!), most of the top comp teams were down in Montgomery, AL for PoosaQ -- a $75G contest. I am proud that my boxes got 9s in appearance, except for 2 judges that gave me 8s.
There's really just a guideline of timeline. I've got to work on chicken -- it was perfectly done 30 minutes before turn in and it just doesn't hold well! Wind was a big factor on Saturday. I burnt thru most of my wood and pellets. Wind is harder to adjust to than rain. Wind and rain is a double whammy!
Thanks for taking us with you. This was a very interesting thread. It showed me that I never want to do competition. Too much work. And if your lovely food wasn’t perfect in the judges’ eyes, I’d be doomed.
If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
