      HawkerXP Anything but is a category where you can enter any food except for the main competition or ancillary category. For example the competition was for ribs and they had a drink competition as well. That means the anything but category can be anything other than ribs and drinks.
      I cooked the ribs on the PK because I didn't feel like getting my big reverse flow out for just 3 racks of ribs. That PK360 is one great rib cooking grill! Thanks everyone for the kind comments. Our next cook is October 7th and we will be doing a SCA steak competition and also entering into the Bloody Mary contest and a hot dog competition!

                Cooked at 225 I rubbed the ribs with smoking guns hot and smoked with cherry until 160. Wrapped them until 203 internal temp. Basted Head Country sauce on them and returned to grill for 20 mins to set the glaze.

                I don't cook to times on ribs just to temperatures. Over all it took about 6 hours at 225.

                  I go by the 3-2-1 method so sounds about right at 225. Last hour I crank it up to about 325 for the saucing stage. Again congrats !!!
