First cook after the burn in was a Duroc Pork butt. Took a little longer. Lots of learning was done. I started the fire with a fire starter tumbleweed in a bed of lump charcoal (Cowboy Charcoal). I opened the bottom vent wide open and had the top wide open per instructions. Went inside for 15 - 20 minutes thinking about how long it took to get a chimney of coals hot. Came out to find the Primo at 325-350. Shut the vents down (didn't believe it took so little time to get to temp) and waited an hour until the temp was at 250 as confirmed with my Fireboard. The fire, however, was now out so had to restart it and then I was super paranoid and was checking temps after only 5 minutes. Once I knew fire was going I got the vents shut down quickly and leveled out the temps at about 260 throughout the cook. Worked great. The butt was delicious, however, it took a bit longer than I had anticipated.
The last pic was immediately prior to wrapping for the butt to rest.
