    MCS - I did a thing.

    Been eyeing Primos for awhile. Got a great deal from a friend for the Primo XL and cart. The cart rolls easily on the patio making moving the unit a breeze. Doing the initial burn in now. Thinking a pork butt will be the first cook as I figure this thing out because I figure it would be very forgiving as I learn.

    As always, I’m open to suggestions.

                      Oh heck yes!!

                      Take your time letting that sucker heat sync. Once that happens you are golden. Getting that to cool down/lower the temp is harder. Take her up graciously.

                      Awesome table too. Is that metal gonna heat up with the cooker?

                        I learned the hard way how quickly they heat up this morning too. I'm doing a pork butt. Started my coals with two tumbleweed starters. Left bottom open and top open. Went inside for maybe 10 minutes. It was at 325. Closed everything off. Killed the fire and then restarted. Now cruising at 260.

                        The table doesn't get hot from the grill. There is a nice gap between the Primo and the surrounding surfaces. However, the metal did get hot when it was in the sun!

                        Nice. Since you got a good deal, consider springing for a rotisserie attachment. My Green Egg is now a dedicated rotisserie rig. I cut a grill grate to fit across the middle for a water/drip pan, bank lump in the back.
                        Works really well with one of the new wireless temp probes.

                          I would sure think about it. I love the rotisserie on my Napoleon. It has a basket attachment and that makes the best chicken wings.
