Since you've already had success with brisket, I think you'll enjoy moving to something that gives you a little more control over smoke and temperature. The Slow 'N Sear is a solid option if you're willing to spend a bit of time learning charcoal management, but if convenience is a priority, a quality electric smoker or pellet smoker might suit you better. Because it's just the two of you, you don't necessarily need a huge cooker either. If you're comparing different models, it's worth checking out a bbq for sale from a few retailers so you can compare features, sizes, and warranties before deciding. Whatever you choose, I think you'll have much better results than trying to make a rusty gas grill do everything.
