    Eric ecowper did a great post awhile back on maintaining certain temperatures when using an SnS in a kettle. I thought it might be a reference for you.

    Okay, I am now 4 cooks in on the SNS. I have cooked 3 lb Tri-Tip 3 lb chuck roast for chili 5 lb spatchcocked chicken 7.5 lb bone in pork butt So far, each one has turned out well. I have not done burgers, steaks, pork chops, or ribs. Those are coming soon. Here’s what I’ve learned. I like this cooker so much, I’m

        I had ordered a 22" Black Edition and ran into a couple issues. One is that I was surprised to find out that the Black Edition is the only one of the 22s that has a plated grill... that's right, no 304 stainless grill.

        The other is that I apparently ordered the BE from a pretty shady operation. Dunno how cancelling that is gonna go, but in the meantime I went ahead and ordered a 22 Standard one from SnS via Amazon Prime. Also ordered the cast iron drip/grill pan.

        Anyway, that will all get resolved eventually, and I have the Home & Roam and my PBCJr to use for now.

          Glad you are figuring it out - sounds like quite the adventure! As you’ve now learned, for low and slow a chimney or even half chimney of blazing coals is too much for the kettle with SNS - especially a smaller travel kettle. I start with 10-12 lit briquettes on a 22” with the SNS, and then fill the rest of the SNS with charcoal and top with a few wood chunks. I’ve got it down to 10+ hours per load of charcoal with the right briquettes (B&B).

            If it was a "Set It and Forget It" deal I'd get bored with it. But I do think my best experiences with the Home & Roam will be grilling, not as a smoker.

              The only time I use a lit chimney is when I am ready to cook, hot n fast. I nearly always use a starter square placed in the middle of half dzn KBB. Never had a flameout.

                I'm glad you apparently enjoy your Traeger, I had one a few years back. Hated it.
