I finally had a chance to cook something longer/slower than burgers and sausages on my SNS kettle. And I have to say, I was disappointed in its temperature stability. Here I was all excited about buying fireboards and fans to keep those temps consistent, but this thing is so ridiculously stable that I won’t really need any of these fun tools! 😁
In all seriousness: this kettle is amazing. My oven’s temp band is 50 degrees (oscillating 25 to each side), and somehow this charcoal kettle is far more consistent than my electric oven. I may at last be confident enough to try brisket next.
Scotch: Current favorite- The Arran (anything by them), Glenmorangie 12yr Lasanta, sherry cask finished. The Balvenie Double Wood, also like Oban 18yr, and The Glenlivet Nadurra (Oloroso sherry cask finished) among others. Neat please.

I have also been super impressed at the temperature stability. I get it fired up, close the bottom vents, open the fan port about half way, and have the top vent half way open and the thing stays at 275 for quite a few hours.
