- If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
That does look nice. Considering it is not available, I think you could cobble something together to simulator it, if you can find a pan or charcoal basket that will fit the center part of the PK360 the way that one does, then a two layer insulated pan above it, with a way to raise the grate for airflow under the food. The trick is finding stuff similar in size to the PK360, but a little smaller.
What comes to mind is a 13x18 insulated (2 layer) half sheet pan, like we have in our kitchen, raised above the fire as a deflector.
