That does look nice. Considering it is not available, I think you could cobble something together to simulator it, if you can find a pan or charcoal basket that will fit the center part of the PK360 the way that one does, then a two layer insulated pan above it, with a way to raise the grate for airflow under the food. The trick is finding stuff similar in size to the PK360, but a little smaller.
What comes to mind is a 13x18 insulated (2 layer) half sheet pan, like we have in our kitchen, raised above the fire as a deflector.Comment
